Chef Sanjeev Kapoor on what keeps him confident at the age of 59

The chef started his career in 1984 in the hospitality industry after completing a diploma in hotel management from the Institute of Hotel Nutrition and Catering Management, Pusa, New Delhi. As a chef, how do you continue to innovate yourself and your recipes?

I have a healthy passion for novelty, which keeps me on my toes and allows me to explore avenues. I also believe that any recipe, whether it’s a recipe for a dish or a recipe for life, you can’t go wrong with adding innovation and dher saara pyaar (lots of love). So my mantra is for re-invent is to keep things simple but play around with ingredients, methods and presentation to ensure you’re doing something different than the last. To do that, however, you need to be able to analyze changing dynamics. As the younger generation thinks it’s relevant to trends, I do the same. I research and then tweak to ensure that every recipe has the necessary adjustments to fit current trends. To give you an example, I realize consumers are now more aware of their food choices, so as a chef, I work accordingly to create healthy recipes. strong and creative.

Who inspires you?

I believe my constant drive to explore inspires me to continue, but it wouldn’t be possible without the love and support of my family. My parents were, are and will always be my inspiration! They taught me and encouraged me to go further with patience, a solid foundation, and never stopping learning. Also, I think the audience inspired me to do more of what I do and all of that brought me here today!

Is there a typical day at home?

Just like everyone else, I also have a routine, eat breakfast, exercise, go to work, come home, enjoy time with family and call it a day. The only difference is that my routine is not monotonous, every day I do something different at work. Some days, I’m trying new things cooking recipe, brainstorming ideas and attending meetings, other days I am doing my social responsibility and being a philanthropist like I am, raising funds with Akshaya Patra, a non-profit organization. I thoroughly enjoy all of these things so I never feel bored or tired.

What is your go-to home dish or comfort meal?

Because I love food, instead of just one dish, I like to try many types of dishes every day. There’s always the world on a plate at our house! My favorite dish is dosa made by my wife Alyona. She makes the best masala dosas. Also, comfort food for me is maa ke haath ka khana!, especially kadhi chawal. To this day, I can never get enough of it!
